HMR Chicken Creole with Brown Rice

Creole is a staple of southern cuisine. Our HMR Chicken Creole with Brown Rice Entree is a much lower-calorie version of the same dish that was made specifically with dieters in mind. Tender chunks of chicken mixed with perfectly cooked brown rice in a rich tomato sauce with a classic creole taste. Food shown with added vegetables.

Creole Stuffed Pepper

INGREDIENTS

  • 1 HMR Chicken Creole with Brown Rice Entree
  • 1 whole red, yellow, or green bell pepper
  • 2 cups fresh spinach
  • ½ cup canned, diced tomatoes
  • 1 tsp. minced garlic
  • Salsa (optional—to taste)

DIRECTIONS

  1. Cut the top off the pepper and remove core and seeds.
  2. Sauté spinach and garlic in nonstick cooking spray for 3–5 minutes until spinach is wilted.
  3. Combine entree, spinach, and diced tomatoes.
  4. Fill the pepper with mixture.
  5. Bake at 400° for 15 minutes.
  6. For a softer pepper, steam first for 5 minutes.
