HMR Five-Bean Casserole

The HMR Five-Bean Casserole Entree is easily one of the most filling diet meals offered by HMR. Perfectly cooked red, black, and white beans are combined with lentils, potatoes, and chickpeas to make this delicious dish. It is finished with a flavorful sauce that makes this entree an excellent choice for lunch, dinner, or an afternoon snack! Food shown with added vegetables.

Spectacular Squash Casserole

INGREDIENTS

  • 1 HMR Five-Bean Casserole Entree
  • ½ acorn squash (or 1½ cups other winter squash, such as butternut, cooked)
  • ½ fresh avocado, sliced
  • 1 small fresh tomato, diced
  • 1 Tbsp. nonfat sour cream

DIRECTIONS

  1. To cook acorn squash in the microwave, poke several holes in the skin.
  2. Place on microwave-safe plate. Cook for 9 minutes.
  3. When cooled, remove seeds.
  4. Scrape squash from the skin and set aside.
  5. Heat entree.
  6. Pour entree over squash.
  7. Top with avocado and tomato. Stir in the sour cream.
