HMR Mushroom Risotto

Our Mushroom Risotto Entree combines rice, mushrooms, red peppers, and a hint of parmesan cheese to make a deliciously satisfying meal. A slight kick of spicy pepper really brings this dish to life. Mushroom Risotto is one of several vegetarian entree options available to those participating in the HMR weight-loss program. Food shown with added vegetables.

Risotto Riot

INGREDIENTS

  • 1 HMR Mushroom Risotto Entree
  • ½ cup frozen edamame (soybeans)
  • ½ cup carrots
  • 1½ cups fresh baby spinach
  • ½ fresh tomato, sliced
  • ½ fresh avocado, sliced

DIRECTIONS

  1. Cook the edamame and carrots for 3 minutes in the microwave.
  2. Add spinach and the entree.
  3. Cover and cook for 1–2 minutes more.
  4. Stir to blend.
  5. Top with tomato and avocado slices.
