Fajita Bowl

A zesty dish made in one pan. Perfect simple dinner for one or a big batch for the whole family. This recipe makes 1 serving at 350 calories. This recipe supports the Healthy Solutions plan and Phase 2 diet plans.
INGREDIENTS
- 1/2 cup sliced onions
- 1/2 cup sliced bell pepper
- 1 HMR Chicken with Barbecue Sauce Entree
- 1/4 packet fajita seasoning
- 1/4 cup water
- juice from 1/2 lime
- 1/4 cup salsa (optional)
DIRECTIONS
- 1. Place a pan over medium heat and spray with cooking spray. Add onions and peppers. Slice chicken into strips and add to pan. Heat until soft, about 5-10 minutes.
- 2. Dissolve seasoning in water and add to pan with lime juice, if desired. Mix together and heat until warm.
- 3. Add rice and beans from entree and stir thoroughly. Remove from heat and top with salsa.
