Lemon Berry Ice Cream

This recipe supports the Healthy Solutions plan, and can also be used with Healthy Shakes and Phase 2 plans.
INGREDIENTS
- 1 HMR Vanilla Shake
- 1/2 Cup cold water
- 1/2 Cup frozen unsweetened raspberries
- 1/2 Cup frozen unsweetened blackberries
- 1 Tablespoon sugar-free, fat-free lemon pudding mix
DIRECTIONS
- 1. Place frozen berries in food processor fitted with a metal blade.
- 2. Process frozen berries until finely ground.
- 3. Turn off the food processor.
- 4. Scrape berries down off the sides of the processor.
- 5. Turn the food processor back on.
- 6. Add water, shake mix, and pudding powder.
- 7. Process for 2 minutes or until it becomes a soft "ice cream" texture.
