This Mexican-inspired salad layers all of the flavors and colors of this classic dish. Turkey Chili is covered with crisp veggies, sour cream, and then topped with zesty green chilies. This recipe supports the Healthy Solutions and Phase 2 diet plan. This recipe makes 1 serving at 405 calories.
INGREDIENTS
  • 1/4 fat-free sour cream
  • 1 HMR Turkey Chili with Beans Entree
  • 1 Cup red bell pepper, cut into small pieces
  • 1/4 Cup salsa
  • 3 Cup lettuce, chopped
  • 1/2 Cup tomatoes, chopped
  • 1 4 oz. can roasted green chilies, chopped
DIRECTIONS
  1. 1. Saute bell pepper pieces in pan in nonstick cooking spray until soft.
  2. 2. In a separate bowl, mix the salsa and sour cream.
  3. 3. Layer the ingredients on a plate in the following order: entree, salsa and sour cream mixture, lettuce, tomatoes, red peppers.
  4. 4. Sprinkle the top with green chilies.
