Shepherds Pie Boats

INGREDIENTS
- 1 HMR Vegetable Stew with Beef Entree
- 1 Acorn squash
- 1 Cup peas
- 1 Cup mashed potatoes made with chicken broth
- Salt and pepper to taste
DIRECTIONS
- 1. Preheat oven to 350 degrees and prep baking sheet with aluminum foil and cooking spray.
- 2. Cut squash in half lengthwise and remove seeds. Then place flesh-side down and bake about 40 minutes (until tender).
- 3. While squash is baking, make mashed potatoes by boiling a couple of potatoes until tender.
- 4. Drain off water and add chicken broth to desired consistency, salt and pepper to taste, and mash together.
- 5. Combine entree with peas and warm in microwave for 1-2 minutes.
- 6. Put half the entree mixture in each of the squash halves, then top each half with a scoop of mashed potatoes.
- 7. Put back on baking sheet and bake another 10-15 minutes.
