Savory mushrooms stuffed with our HMR Mushroom Risotto Entree and cooked until golden brown makes for a great appetizer that the whole family will love or an earthy meal just for you! This recipe supports the Healthy Solutions and Phase 2 diet plan. This recipe makes 2 servings at 173 calories per serving.
INGREDIENTS
- 1 HMR Mushroom Risotto Entree
- 8oz. Baby bella mushrooms
- 1 Clove garlic (minced)
- 1 Cup red bell pepper (finely chopped)
- 1 Tbs low-sodium soy sauce
- 2 Tbs chopped green onion (optional)
DIRECTIONS
- 1. Heat oven to 350 degrees. Prep baking sheet with aluminum foil and cooking spray.
- 2. Remove stems from mushrooms, wash and pat dry with paper towel.
- 3. In a medium frying pan, sautee minced garlic and chopped bell pepper until pepper is tender.
- 4. In a small bowl combine Mushroom Risotto entree, sauteed garlic and bell pepper, and soy sauce. Mix to combine.
- 5. Fill mushroom caps generously with entree mixture and place on baking sheet.
- 6. Bake about 25 min, until mushrooms are tender.
- 7. Garnish with green onion (optional).
