BBQ Chicken Sweet Potato

INGREDIENTS
- 1 Medium sweet potato
- 4oz shredded cooked chicken
- 2 Tbs BBQ sauce
- Sprinkle of scallions
DIRECTIONS
- 1. Preheat oven to 425 degrees.
- 2. Wrap sweet potato in aluminum foil and bake in over for about 40-50 min until easily pierced with a fork.
- 3. Mix together shredded chicken, BBQ sauce, and scallions.
- 4. Once sweet potato is cooked, slice in half and place bbq chicken mixture into potato.
