Preheat oven to 350 degrees. Prep baking sheet with parchment paper and cooking spray.
Remove stems from mushrooms, wash and pat dry with paper towel. In a pan over medium heat, saute chopped bell pepper until pepper is tender, adding garlic halfway through (you don’t want the garlic to burn).
In a small bowl, combine the Entree, cooked pepper and garlic, and soy sauce. Mix to combine.
Fill each mushroom cap generously with the Entree mixture and place on baking sheet. Bake for about 25 minutes, until mushrooms are tender, and topping is a little crisp. Garnish with green onion and/or parsley (optional).
