2 cups green bell pepper, chopped
2 cups red bell pepper, chopped
½ cup celery, chopped
3 cups carrots, chopped
2 cups sweet yellow onion, chopped
2 cups purple onion, chopped
2 cups corn, cooked (fresh or frozen)
2 cups broccoli florets, raw or steamed al dente, chopped
4 ounces cooked plain or whole wheat elbow or spiral pasta (OR quinoa, couscous, or grain of choice)
5 Tbs nonfat plain Greek yogurt (we love Fage brand), or nonfat mayonnaise
Mix all ingredients together in a large bowl.
Season with salt and pepper to taste.
Chill for at least an hour before serving to allow flavors to meld.
