Ingredients

  • 1 lb fresh whole carrots

  • Olive oil cooking spray (e.g. PAM brand)

  • 2 Tbs fresh lemon juice (about half a lemon)

  • Fresh thyme (5-6 stems)

  • Salt and pepper, to taste

Directions

  1. Preheat oven to 400 degrees.

  2. Peel the carrots. To cook evenly, cut them into sticks approximately 3-4 inches long and a half inch wide.

  3. Place in a single layer on a baking sheet.

  4. Spray carrots with the olive oil spray and then drizzle the lemon juice over the carrots. Season with salt and pepper.

  5. Sprinkle the thyme leaves over the carrots. (To remove the thyme leaves from the stems, hold each sprig at the top and gently slide your fingers down it to remove leaves.)

  6. Roast for 25 – 30 minutes, flipping the carrots halfway through. Carrots are done when they’re fork tender.
