Stuffed baby bellas with the HMR Mushroom Risotto Entree are a delicious alternative to a favorite appetizer. Bring a platter to your next party to stay on track with your goals without sacrificing flavor!
1 Mushroom Risotto HMR Entree
8 oz baby bella mushrooms
1 clove garlic, minced
1 cup red bell pepper, finely chopped
1 Tb low-sodium soy sauce
2 Tb chopped green onion (optional)
Heat oven to 350 degrees. Prep baking sheet with aluminum foil and cooking spray.
Remove stems from mushrooms, wash and pat dry with paper towel. In a medium frying pan, sautee minced garlic and chopped bell pepper until pepper is tender.
In a small bowl combine entree, sauteed garlic, bell pepper, and soy sauce. Mix to combine.
Fill mushroom caps generously with entree mixture and place on baking sheet. Bake about 25 minutes, until mushrooms are tender. Garnish with green onion (optional).
