Berry Summer Salad

INGREDIENTS
- 2 Cups spinach
- 1/2 Cup sweet potato (cubed, roasted)
- 1/2 Cup red bell pepper (chopped)
- 1/2 Cup strawberries (sliced)
- 1/2 Cup blueberries
- 1/2 Avocado (sliced)
- Salt and pepper to taste
- Juice from 1/2 lemon
- 2 Tbs balsamic vinegar
DIRECTIONS
- 1. Preheat oven to 450 degrees. Prep baking sheet with aluminum foil or parchment paper and cooking spray.
- 2. Cut sweet potato into cubes, place on baking sheet, sprinkle with salt and pepper, and roast 15 min on each side.
- 3. Once sweet potatoes are cooked, place all ingredients in a large tupperware or bowl, cover and shake to coat vegetables in dressing.
- 4. Move to a plate and enjoy.
