Craving something with crunch? Skip the chips and snack on these low-calorie, crispy veggies made with eggplant, carrots and green beans! You can even pair these crispy veggies with your favorite HMR entree or a lean protein. This recipe supports the Healthy Solutions and Phase 2 diet plans. This recipe makes 3 servings, at 95 calories each.
INGREDIENTS
- 1 Medium eggplant
- 1 Large carrot
- 1 Steamer bag of green beans
- Spices of choice (garlic, onion, paprika, basil, etc.)
DIRECTIONS
- 1. Preheat oven to 450 degrees.
- 2. Chop eggplant and carrot into thin flat slices (chip-like).
- 3. Spray a baking sheet with non-stick cooking spray. Spread eggplant slices, carrot slices, and green beans on baking sheet.
- 4. Sprinkle veggies with spices of choice. Roast in oven for 15-22 min. Then broil for 5-7 min until crispy.
- 5. Serve immediately.
