Enjoy this hearty Whole Grain Medley with Chicken entree with a Mediterranean-style twist. A perfect blend of chickpeas, artichokes, bell peppers, and a hint of lemon. INGREDIENTS
- 1 HMR Whole Grain Medley with Chicken entree
- 1/2 Cup canned artichoke hearts (in water), (drained and quartered)
- 1/2 Cup chickpeas (drained and rinsed)
- 1/2 Cup red bell pepper (diced)
- 1 Tbs lemon juice
- 1 Tbs non-fat sour cream
- 1 tsp chopped garlic
- Salt and pepper to taste
DIRECTIONS
- 1. To enjoy cold- simply combine all ingredients.
- 2. To enjoy hot- preheat oven to 350 degrees.
- 3. Place all ingredients in a bowl and mix to combine.
- 4. Spray an oven-safe dish with non-stick cooking spray, add the combined ingredients, and bake uncovered for about 25 min.
