Guacamole and Sweet Peppers

Take snacking to the next level with this crowd pleaser. This recipe can be doubled or tripled for a party, supports the Phase 1 Healthy Solutions plan and Phase 2, and makes at least 2 servings at about 200 calories per serving.

Ingredients

  • 1 medium ripe avocado

  • 1 clove garlic, finely chopped

  • 3-4 cherry tomatoes, finely chopped

  • 1 Tbs fresh parsley or cilantro, finely chopped

  • 1 lime

  • ¼ tsp crushed red pepper flakes (optional)

  • 12 mini sweet peppers, sliced in half lengthwise, and seeded

Directions

  1. Make the guacamole: Slice the avocado in half, remove the pit, and scoop into a small bowl. Mash with a fork until mostly smooth.

  2. Squeeze the juice of half the lime over the mashed avocado.

  3. Add the garlic, tomatoes, fresh herbs (and optional red pepper flakes) to the mashed avocado and stir to combine.

  4. Prep the peppers: Wash and dry the peppers. Slice lengthwise, removing the seeds and pith. Arrange the colorful veggies on a small platter around the bowl of guac (add a slice of lime for garnish) and enjoy!
