Awesome Base for Minestrone Soup!
This is my favorite HMR meal. I make a big batch of vegetable soup (canned San Marzano tomatoes, onions, mushrooms, zucchini, summer squash + a mix of beef and chicken broth) and add this meal to it. It makes a really delicious Minestrone-style soup. The sausage adds such a nice, spicy flavor. Adding a bit of Better Than Bouillon beef or chicken does wonders to this soup. I also like to add baby spinach at the end and let it wilt before I eat it. I actually look forward to eating this and would eat this even if I weren't on the HMR diet.

I like what this other member did by reviewing every meal so she can remember which ones she likes. This has a lot of facility as a base for other veggies and beans.

I ate each of the entrees and wrote myself a review of each so I knew what to order for my future boxes, rating each on a 10 point scale. This is my final score: 9.5/10 - really good variety of flavor and texture. Has a good kick of heat. Really good with some fat free plain Greek yogurt to add creaminess. It honestly reminded me of a dish my mom made growing up where she would add chili and sour cream to egg noodles.
