This is the mother of all fruit salads, credited to HMR Founder, Dr. Larry Stifler. It's a little bit fancy, with lots of berries and other gorgeous fruit. It also excludes anything that doesn't hold up, i.e. strawberries, bananas, or melon. This recipe supports the Phase 1 Healthy Solutions plan and Phase 2, makes a huge batch, and has about 93 calories per cup.
1 small bag of fresh cherries, pitted and sliced in half, lengthwise (a handheld cherry pitter is a must!)
1 large bunch of red grapes, sliced in half, lengthwise
2 mangoes, peeled and diced
1 pineapple, cored and cut into bite-sized chunks
3 ripe kiwi fruit, peeled, sliced, and then cut slices in half
1 pint of fresh blueberries
1 pint of fresh blackberries
1-2 pints of fresh raspberries
NOTE: You can also add an orange or nectarine, but we recommend steering clear of fruit like cantaloupe or other melon, as well as strawberries and bananas.
Directions
Start with the cherries and grapes, then add the pineapple, mango and kiwi, mixing everything together in a large bowl.
Next add the blueberries and blackberries, mixing again.
Lastly, add the raspberries, carefully mixing in half of them into the salad, and then topping the salad with the rest.
