Sweet Potato Crust Pizza

Ingredients

  • 2 medium sweet potatoes

  • 1 cup of oat or almond flour

  • 1 egg

  • 1 Tbs apple cider vinegar

  • 1 tsp fresh basil, chopped

  • 1-2 cloves of fresh garlic, finely chopped, or 1 tsp garlic powder

  • 1 tsp dried oregano

  • ¼ tsp salt

  • 1 Tbs extra virgin olive oil

  • Toppings of choice (marinara sauce, fresh tomatoes, mozzarella cheese, onions, peppers, other veggies, etc.)

Directions

  1. Preheat the oven to 400 degrees and prep a baking sheet with cooking spray.

  2. Poke sweet potatoes with a fork and microwave for 5-10 minutes.

  3. Once sweet potatoes are cool, cut in half, and scoop out the flesh into a medium bowl. Mash with a fork.

  4. Add flour, egg, apple cider vinegar, herbs and spices, and olive oil to the mashed sweet potato and mix well. (Mixture will be thick and sticky.)

  5. Using a rubber spatula, spread the sweet potato mixture evenly onto the prepped baking sheet.

  6. Bake for 25-30 minutes (if crust is thin, check after 20 mins).

  7. Remove from oven, add desired toppings and then cook for an additional 5-10 minutes.
