Maple Balsamic Brussels Sprouts

This recipe is perfect as a side dish, an addition to a salad bowl, or mixed in with just about any HMR Entree. This recipe makes about 4 servings at about 60 calories per serving and supports the Healthy Solutions diet and Phase 2. 

Maple Balsamic Brussels Sprouts

Ingredients

  • 1 pound Brussels sprouts, trimmed and cut in half lengthwise

  • salt and pepper, to season the Brussels before roasting, to taste

  • 2 Tbs sugar free maple syrup

  • 1 Tbs balsamic vinegar

  • cooking spray

Directions

  1. Preheat oven to 400 degrees and pull out a large rimmed baking sheet (for extra crispiness, roast the veggies directly on the sheet).

  2. Make the glaze by mixing together 1 Tbs maple syrup and 1 Tbs balsamic vinegar. Set aside.

  3. Prepare the Brussels sprouts by trimming the ends, removing any leaves that are browned or wilted, and then cutting them in half, lengthwise.

  4. In a medium mixing bowl, toss the Brussels sprouts with the remaining Tbs of maple syrup, salt and pepper.

  5. Spread them onto the baking sheet in a single layer, making sure they are all cut side down (this will make them extra crispy).

  6. Roast for 20-25 minutes, until cooked through.

  7. As soon as you pull them from the oven, toss them immediately (right on the baking sheet) in the balsamic maple glaze. Mix them so they are all coated and then return them to the oven.

  8. Roast them for another 5-10 minutes until everything is tender, golden, and crispy!
