A rich, creamy frozen treat that is perfect for anytime you want a little taste of Autumn. This recipe is 225 calories, has 12 grams of protein and supports the Healthy Solutions diet and Phase 2.

1 HMR 120 Vanilla Shake Mix
1 cup canned pumpkin (unsweetened)
1 Tbsp sugar-free butterscotch pudding powder (e.g. Jell-O brand)
1 tsp Pumpkin Pie Spice
non-caloric sweetener to taste (optional)
½ cup cold water
8 ice cubes
Add 8 ice cubes to a food processor fitted with the metal blade. Process ice until finely ground, like snow. Scrape ice down as needed to process thoroughly.
Add water, shake mix, pumpkin, pudding powder, spice, and sweetener (if using). Process for 2-4 minutes, stopping to scrape down the sides as needed, until it becomes a soft-serve ice cream texture.
Tip: For firmer ice cream, place bowl of ice cream in the freezer for 30 minutes to an hour before eating.
